Good Soup Recipe

This recipe comes from love. I made it for my husband the first time he got sick during our first year of marriage. After eating it he felt better and said,”Chicken soup really does work!” My response was,”Because it was made from love.” So maybe it should be titled “Love Soup”. But it’s good too! All I’m saying is I’ve offered my kids pizza or soup and they choose soup. I digress. The bone broth in this soup boosts the immune system so chicken stock alone won’t do for wellness sake. Anyway, there are many variations of this soup depending on what I have on hand or how creative I feel that day, but I’ll give you the basic version with optional ingredients. For a vegetarian version just omit the parts that call for chicken. Okaaaay, I’ll get to it. I feel you. I hate when it takes 9 days to get to a recipe too.

INGREDIENTS

▫️Rotisserie chicken (diced or shredded) or 3 raw chicken breasts (cubed)*

▫️32oz Organic chicken bone broth

▫️1 white onion (diced)

▫️3 stalks of celery with leaves (diced)

▫️16oz bag classic mixed vegetables (peas,corn,carrots,and green beans)

▫️2 sprigs fresh parsley*

▫️2-3 packets of Goya powdered bouillon or any bouillon you have on hand.

▫️8oz bag wide egg noodles

▫️Ground black pepper to taste

▫️46.5 oz bag Tai Pei chicken potstickers or any brand you can find*

▫️32oz water

* Optional

I used fresh carrots this day but you don't have to

  1. Cut up your chicken and fresh vegetables and set aside.
  2. Add bone broth to a Dutch oven on medium low heat. DO NOT BOIL. Should simmer. Once broth is heated add chicken and fresh vegetables and parsley. Then add the water and 2 bouillon packets. Let simmer for 20 minutes.
  3. Reduce heat to low. Add 1/2 bag of mixed vegetables (use more if you want). Let cook for 7 minutes or until slightly tender.
  4. Add 1/2 bag of egg noodles. Cook for 10 minutes. Add pepper to taste. (If not using next step, cook for 20 minutes or until noodles are soft and serve).
  5. Add 6-7 potstickers, cover pot and cook for additional 15 minutes. If you find you have too much substance and not enough broth then add another 8oz of water. Taste the broth to determine whether you need the third bouillon packet at this point.

And that’s it! Good soup!

Makes 6-7 servings/ prep time 25 min/ cook time approx. 60 minutes.
