These muffins are delicious! They are easy to make and make an equally satisfying breakfast or dessert. Whenever we have overripe bananas, there’s a pretty good chance we’ll be making muffins. I’m not a fan of lofty introductions to recipes (though I can be lofty at times);So let’s get to it!
Ingredients
2 cups flour
2 cups dark brown sugar
1/8 cup white sugar
1 cup chocolate chips
2 overripe bananas
1/2 cup organic unsweetened apple sauce
1 tablespoon baking soda
1 tablespoon cocoa powder
2 teaspoons of pumpkin spice or nutmeg
1 teaspoon of Himalayan sea salt
2/3 cups coconut oil
1 egg
1. Preheat oven to 375 degrees. In a medium sized bowl mix together flour, cocoa powder, salt, pumpkin spice, baking soda and sugars (brown and white).
2. In a separate bowl mash bananas really well. Add egg,coconut oil and apple sauce. Mix well.
3. Add banana mixture to flour mixture. Mix well.
4. Gently fold in chocolate chips.
5. Line a muffin pan with muffin liner cups and scoop muffin mix into cups filling them up half way. Sprinkle a few chocolate chips on top.
6. Bake for 20 minutes or until muffins are firm.
